Vegan Chilli To Share With Friends & Family
Ingredientes
2-tablespoons oilive oil
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
3 med. carrots, chopped
2-tsps cumin powder
1-tsp smoked paprika
1/2-tsp chilli powder
1 can diced tomatoes, with juice
1 can red kidney beans, drained & rinsed
1 can black beans, drianed & rinsed
1 can corn kernels, drained or fresh kernals from 2-cobs
2 cups vegetable stock
Salt & pepper to taste
Preparación
Heat the olive oil in a large pot. or skillet over medium heat
Add the onion and garlic and sweat-off for 2-3 minutes, or until the onion is soft
Add the bell pepper,carrot, smoked paprika & chilli powder & cook for 5 minutes until vegetables are tender
Add the diced tomatoes, kidney beans, black beans, corn and vegetable stock and bring to the boil
Reduce heat to low and simmer for 30 minutes until liquid has thickened
Season with salt & pepper to taste
