Vegan Chilli To Share With Friends & Family

Ingredientes

2-tablespoons oilive oil

1 onion, chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

3 med. carrots, chopped

2-tsps cumin powder

1-tsp smoked paprika

1/2-tsp chilli powder

1 can diced tomatoes, with juice

1 can red kidney beans, drained & rinsed

1 can black beans, drianed & rinsed

1 can corn kernels, drained or fresh kernals from 2-cobs

2 cups vegetable stock

Salt & pepper to taste

Preparación

  • Heat the olive oil in a large pot. or skillet over medium heat

  • Add the onion and garlic and sweat-off for 2-3 minutes, or until the onion is soft

  • Add the bell pepper,carrot, smoked paprika & chilli powder & cook for 5 minutes until vegetables are tender

  • Add the diced tomatoes, kidney beans, black beans, corn and vegetable stock and bring to the boil

  • Reduce heat to low and simmer for 30 minutes until liquid has thickened

  • Season with salt & pepper to taste
