US based, Leprino Foods, the world's largest producer of dairy-based mozzarella cheese, is taking a step into precision fermentation technology. The company is partnering with the Dutch startup Fooditive Group, which produces plant-based ingredients and specialises in precision fermentation. This partnership marks a major shift as Leprino Foods adopts Fooditive’s cutting-edge precision fermentation technology to produce and commercialise non-animal casein.

This will see Leprino Foods holding exclusive global rights to produce, market, and distribute animal-free casein for use in cheese production. Additionally, they will possess non-exclusive rights for its use in other food applications like beverages, yogurts, and desserts. This strategic move is not only a testament to Leprino's adaptability to emerging food technologies but also aligns with global demands for more environmentally friendly and sustainable food production methods.
Precision fermentation, central to this partnership, involves engineering microorganisms to produce complex proteins like casein, which are identical to those derived from animals. This technology promises to deliver the same taste, texture, and functional benefits as traditional casein, making it a perfect fit for cheese and other dairy-related products.

The significance of this development extends beyond just product innovation. It represents a crucial step towards reducing the dairy industry's environmental footprint, as this method significantly cuts down on water, land use, and greenhouse gas emissions associated with conventional dairy farming. By integrating precision fermentation into their production processes, Leprino Foods is setting new standards in the dairy sector, aiming to meet the growing consumer demand for sustainable and ethically produced food items.
Both Leprino Foods and Fooditive are excited about the potential of this collaboration to transform the food industry, making a lasting impact on our planet while continuing to meet the high-quality standards and tastes consumers expect
