Former Psychologist Turns Fermented Drink Maker, Captivating Kiwi Taste Buds


Amber Fairweather, a 36 year old former psychologist and mother of four, is taking the New Zealand fermented drink market by storm with her Pāpāmoa-based brand, Symbiota.

After switching careers, Amber has become a passionate advocate for fermented foods and probiotic drinks, with her popular range of sauerkraut and sourdough starters. In 2023, she launched Symbiota’s kefir sodas, a delicious, low-sugar beverage quickly winning over customers.


The range, made from water kefir and real fruits like raspberry, mint, and lychee, boast only 3.5% sugar and are rich in probiotics, making them a “better-for-you” alternative to sugary sodas. Amber notes that while kombucha is widely known, water kefir is gaining attention for its milder flavour and wider range of probiotic bacteria.

With support from Foodstuffs North Island, Symbiota’s soda range is now available in 30 stores, including PAK’nSAVE and New World, with plans for further expansion. Emerging Supplier Manager Rachel Prenty recognises the brand’s ability to capture changing consumer preferences for healthier, flavourful drinks.


Amber’s personal connection to gut health, mental well-being, and fermented foods stems from her background in psychology. She’s excited to hear from customers who share stories of improved skin, reduced inflammation, and enhanced mental clarity after trying her products. As Symbiota’s success grows, Amber is already planning to expand her range with new fermented vegetable pickles and condiments. Her hot sauce is already gaining notoriety.
