Forget traditional butter and animal fats, there’s a new star ingredient wanting to take a bite out of the European food service sector -at the same time promising healthier and more sustainable options for your favourite baked goods and dairy treats.
Fatrix is a plant-based fat developed by Israeli FoodTech start-up Gavan Technologies and is about to change the way you taste everything from flaky croissants and brioches to creamy puddings.

Designed to mimic the rich taste and indulgent texture of butter, Fatrix is made from just three simple ingredients - protein isolate, vegetable oil, and water. It’s clean-label, meaning no unnecessary additives or emulsifiers, and it’s packed with nutritional benefits, boasting low saturated fat and zero trans fats.
Fatrix doesn’t just cater to your health, it’s also Earth Friendly. By replacing animal fats with this plant-powered alternative, food manufacturers can reduce their environmental impact while maintaining the indulgent flavours and textures consumers love. It’s a win-win.

Gavan Technologies is gearing up to bring this innovation to Europe, with plans to open a new production facility in April 2025. The company has just secured $8 million in funding to make this dream a reality.
"Our new, fully EU-certified facility is planned to go commercial as early as April next year," says Itai Cohen, Gavan’s co-founder and CEO.
