South Korean startup Millennial Flavor Town has debuted its innovative plant-based Wagyu beef line, MM Beef, at the Plant Based World Expo Europe in London. The range features two products: a marbled Wagyu beef steak and shredded beef available in soy sauce and truffle flavours.

Co-founder, food technologist, and chef Bakrin Ahn, along with her team, have crafted MM Beef to be "a masterpiece boasting a rich heritage and a fusion of flavours that redefine the essence of beef." The development process incorporates traditional Korean fermentation techniques and a blend of ingredients such as soybeans, hedgehog and button mushrooms, rice koji, coconut and olive oils, and beet powder, which imparts the product's meaty colour.
The fermentation process is vital in delivering a deep umami taste and providing the steak with a rich texture and marbling closely mimicking animal beef. Additionally, this method enhances the nutritional profile, resulting in a product high in protein and containing all essential amino acids.

The Korean company joins a growing list of innovators in the plant-based beef sector, including Planted, Juicy Marbles, Chunk Foods, and Adamo Foods, all of which have introduced plant-based beef whole cuts to the market.
As the demand for sustainable and ethical food alternatives continues to rise, Millennial Flavor Town's MM Beef aims to offer consumers a plant-based option not compromising on taste or texture but with the potential to reshape perceptions of meat consumption.
