Israeli, food-tech start-up NewMoo's unveiled an innovative way for producing casein proteins using plant seeds. Their innovation promises to bring authentic, animal-free cheese to the market, maintaining the same sensory properties as animal-based dairy cheese.

Seeds are taken from plants grown using traditional field agriculture, harvested, and processed into a liquid base mirroring the functionality of dairy casein. This animal-free casein is naturally free of lactose and cholesterol, making it suitable for a wider range of dietary needs.
Daphna Miller, NewMoo's co-founder and CEO, explains, “Our animal-free liquid casein mimics all the functional traits of real milk protein for crafting cheese the traditional way. It can seamlessly replace dairy milk in any cheese manufacturing facility without the need for special equipment.”

NewMoo's process is not only innovative but also scalable and cost-effective. Unlike protein powders or precision fermentation, which require expensive bioreactors, NewMoo uses plant seeds as natural bioreactors. This enables the production of complex proteins at a lower cost and with greater environmental benefits.
