Black Bean Quinoa Bowl - Nutritional Bomb!

Ingredients

1-cup Quinoa

2-cups vegetable stock/broth

1-tablespoon olive oil

1 red onion

2 garlic cloves, minced

1 red bell pepper, diced

1 medium sized tomato, diced

fresh corn kernals, 1 cob

1 zucchini, diced

1 can black beans, drained and rinsed

1-teaspoon ground cumin

1/4 -tsp chilli powder

Salt & pepper to taste

Juice of 1 lime

Avocado, diced (optional)

Fresh cilantro (corinader) for garnish

Preparation

Rinse the Quinoa throughly and drain

In a medium-sized pot, bring the vegetable stock or broth to a boil.Add the Quinoa, cover and reduce the heat to low. Cook for 15-20 minutes or until the liquid has been absorbed and the Quinoa is tender.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and saute until softened and frangrant, about 5-minutes.

Add the bell pepper and zucchini and sauter for another 5-minutes until softened.

Add the black beans, cumin, chilli powder, salt and pepper. Cook for another 5-minutes until the beans are heated through.

Finally add the chopped tomato and corn kernals. Mix these through thoroughly.

Divide the Quinoa mixture into bowls and top with diced avocado and fresh colantro (coriander) if desired.
