Juicy young Jackfruit is a great animal meat substitute
Ingredients
2 cans of young jackfruit in brine (drained and rinsed)
1 onion, diced
3 gloves of garlic, minced
1 tbsp olive oil
1/2 cup BBQ sauce
2 tbsp tomato paste
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp paprika
1/2 tsp cumin
1/2 tsp chilli powder, accoding to preference
Salt and pepper to taste
Burger buns
Toppings of choice, lettuce, tomato, pickles, onions, vegan mayo)
Preparation
Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
Drain and rinse the jackfruit, then use your hands to shred it into smaller pieces, removing any tough core parts.
Add the shredded jackfruit to the skillet with the onions and garlic. Stir and cook for a couple of minutes.
In a small bowl, mix together the barbecue sauce, tomato paste, brown sugar, soy sauce, paprika, cumin, chili powder, salt, and pepper. Pour this sauce mixture into the skillet with the jackfruit and stir well to coat.
Reduce the heat to low, cover the skillet, and let the jackfruit simmer for about 20-25 minutes, stirring occasionally. This will allow the flavors to meld and the jackfruit to soften.
Once the jackfruit is tender, use a fork or a potato masher to further break it apart, resembling the texture of pulled meat.
Toast the burger buns if desired. Assemble the burgers by placing a generous portion of the pulled jackfruit mixture onto the bottom half of each bun. Top with your desired toppings.
Serve the pulled jackfruit burgers with a side of fries, coleslaw, or a salad.
