About the Recipe

The Best Tasting Mushroom Tacos Ever Invented!!

Ingredients

For the filling:

2-tablespoons olive oil

1/2 red onion, sliced

3 cloves garlic, minced

6 large portabello mushrooms or exotic mushrooms of your choice

1/2 tsp ground cumin

1/2 tsp smoke paprika

1/4 tsp chilli powder

Salt & pepper to taste


For the taco toppings:

8-9 soft corn tacos

1 avocado, sliced

1/2 cup diced tomatoes

1/4 cup chopped cilantro (coriander)

1 lime, cut into wedges


Preparation

  • Heat olive oil in a large skillet over medium-high heat. Add sliced red onion and cook until softened, about 2-minutes.

  • Add mined garlic to the skillet and cook for another minute.

  • Add slice mushrooms and cook for 5-7 minutes until they are tender and lightly browned.

  • Add ground cumin, smoked paprika, chilli powder, salt and pepper and stir well to combine.

  • Heat soft tacos in a dry pan over medium-high heat for about 30 seconds on each side, or until lightly browned and poliable.

  • Assemble the tacos by placing a spookful of mushroom filling onto each.

  • Top with sliced avocado, diced tomatoes and chopped cilantro (corainder)

  • Serve the tacos with lime wedges on the side for squueezing over the top.
