About the Recipe

Sweet Potato are jammed packed with great nutrition. A sure winner with friends and family.

Ingredients

For the Sweet Potatoes:


  • 2 medium sweet potatoes, peeled and cut into small cubes

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon smoked paprika

  • Salt and pepper, to taste


For the Black Beans


  • 1 can black beans, drained and rinsed

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon garlic powder

  • Salt and pepper, to taste


For the Tacos


  • 8 small corn tortillas

  • 1 avocado, sliced

  • 1/4 cup fresh cilantro, chopped

  • Salsa or hot sauce, for serving

Preparation

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, toss the sweet potato cubes with olive oil, chili powder, smoked paprika, salt, and pepper. Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.

  3. In a small saucepan, combine the black beans with cumin, garlic powder, salt, and pepper. Heat over medium heat until the beans are heated through.

  4. Warm the tortillas in a pan over medium-high heat or in the microwave.

  5. Assemble the tacos by placing a spoonful of black beans on each tortilla, followed by a few pieces of roasted sweet potatoes, sliced avocado, and chopped cilantro.

  6. Serve with your favorite salsa or hot sauce.
