Ingredients
For the Sweet Potatoes:
2 medium sweet potatoes, peeled and cut into small cubes
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika
Salt and pepper, to taste
For the Black Beans
1 can black beans, drained and rinsed
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
Salt and pepper, to taste
For the Tacos
8 small corn tortillas
1 avocado, sliced
1/4 cup fresh cilantro, chopped
Salsa or hot sauce, for serving
Preparation
Preheat the oven to 400°F (200°C).
In a bowl, toss the sweet potato cubes with olive oil, chili powder, smoked paprika, salt, and pepper. Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
In a small saucepan, combine the black beans with cumin, garlic powder, salt, and pepper. Heat over medium heat until the beans are heated through.
Warm the tortillas in a pan over medium-high heat or in the microwave.
Assemble the tacos by placing a spoonful of black beans on each tortilla, followed by a few pieces of roasted sweet potatoes, sliced avocado, and chopped cilantro.
Serve with your favorite salsa or hot sauce.
